PREPARATION: Directions for Pumpkin Muffins In a large bowl combine flour, baking powder, baking soda, cinnamon, and salt. Stir to blend In separate bowl, combine pumpkin, melted butter, milk or half-and-half, the beaten eggs, sugars, and vanilla; mix until blended. Stir pumpkin mixture into the dry ingredients until moistened. Fold in pecans or raisins. Do not overmix. Line 12-cup muffin tin with paper liners or grease well and dust with flour. I use a baking spray. Fill the about 3/4-full with the pumpkin muffins batter, sprinkle with cinnamon-sugar if desired, and bake at 375° for 20 to 25 minutes.
Serve warm or at room temperature. Makes 12 to 16 pumpkin muffins.
4 pieces scrod fillet (6-8 ounces each) Salt and pepper to taste 2 tablespoons lemon juice 1 1/2 cups white wine 1/2 cup butter, melted, divided 1 cup dried bread crumbs Preheat the oven to 350°. Butter a baking pan large enough to hold the scrod in a single layer. Place the scrod in the prepared baking pan, and add the salt, pepper, lemon juice, and wine. Drizzle 1/4 cup of the melted butter over the fish. Bake at 350° for approximately 20 minutes, or until the fish flakes but is still moist. Remove the pan from the oven and preheat the broiler. Scatter the bread crumbs over the fish, and drizzle with the remaining 1/4 cup butter. Brown under the broiler for 2-5 minutes only, until lightly browned, and serve. Serves 4.

Rose: Hi Rose I have had a Flour Tortilla Pizza. Would that maybe what they were talking about? I know it has less calories but that is if you look for the lower cal type.
even pita bread here is 180 to 200 cals for the bread... this pizza that i heard about was 200 in total for the entire 8 inch pita/flat bread pizza... wish I could find the recipe to find out just what type of bread it was

"Snoopy": I realize your oven is off limits due to it being broken.. and yes.. you can do a chicken in a microwave.. but, perhaps you can find someone with a roaster.. or maybe you can afford one.. if not .. I recommend asking Santa to bring one next year..
When I was up in Powell taking a full load at the college.. the holidays were a mad rush for me.. since we had finals one week before.. so cleaning house, decorating and baking was crammed into one week.. I held the Christmas Dinner on Christmas Eve for my Family.. and during one year my parents brought up two roasters one for the Ham.. and one for the Turkey.. I was amazed that the Turkey browned beautifully.. ever since then.. I use the roaster for the meats.. and leave my oven and microwave.. for the side dishes..
For whole birds, cook breast side down for first half of cooking time, then breast side up until done. Cover chicken loosely with wax paper during cooking. Check for doneness after 5 minutes standing time. Internal temperature of whole bird should be 180°F in the thigh, or 170°F in the breast, and 165°F for boneless parts. When cut, juices should run clear, with no pink flesh.
1 Cake Mix 3/4 Cup water 2 Cups Flour 1/2 oil 3 Eggs 2 tsp. Vanilla extract Perheat oven to 375 . Mix all ingredients in a large mixing bowl . Drop dough by spoonfuls onto foil covered cookie sheet . Bake 10 to 12 minutes . Frost when cooled .
1 (2 lb.) pkg. frozen hash brown potatoes, thawed 1/2 c. onion, chopped 1/2 tsp. Pepper 1 tsp. Salt 10 oz. American cheese, grated 1 pt. sour cream 1 can cream of chicken soup 2 c. Corn Flakes, crushed 1/2 c. butter, melted
Mix all ingredients together except Corn Flakes and butter and put into greased casserole dish. Top with 2 cups crushed Corn Flakes mixed with 1/2 cup melted butter. Bake in 350 degree oven for 45 minutes.

Grease a 9" pie plate. Stir all ingredients until well blended . Pour into pie plate and bake 40 to 50 minutes , or till a knife inserted , comes out clean . Be sure to refrigerate . any remaining pie .
