OK...In just over a month, I am taking about 15-20 people backpacking for a week. Any good ideas on what to fix for either breakfast, lunch, dinner? Remember, we are backpacking...heavy is BAD!
Summertop: WElp.. I just fixed myself a chicken casadilla.. I spread on sour cream, cheddar cheese, diced toms and onions, chicken, and avocado spread.. and then put in oven for 20 mins..
Avocado spread for large groups
12 avocado's gutted
1-2 cup mayo
(not miracle whip! YUK)
garlic powder
all purpose seasoning.. (I use Mrs. Dash original)
2 or 3 packets dry veggy soup mix (lipton cup a soups or similar)
mostly mixed on taste.. cream all ingredients together, more mayo can be added to fit your tastes..
Note the earlier you prepare the more the seasonings get to come out in the spread.. make sure to put in air tight container.. :)
also prepare the Chicken ahead of time as well..
Chicken.. skinned, boned, and cubed.. (I use just the white meat)
pan fry adding garlic and Mrs Dash along with a splash of lemon.. no need to use any oil..

I don't know how easy this would be to have on your backpacking trip.. since the sour cream and avocado spread along with the prepared chicken chunks would need to be kept cold..
but as for easy meal.. all you would need to do is get the fire going.. and then place huge cookie sheets over the grill.. or spread foil over the grates.. the person hand makes his tortilla.. and warms it to his liking.. and usually one tortilla fills ya up!
Summertop: I wonder if they were premade and rolled.. and then you just put them in foil on the fire.. Hmmm
I will have to try that when we are camping next month..
Hey.. tell me.. are you going to have a site where all your foods and tents will be set up.. that you come in to in the evenings.. or do you all carry that stuff and set up camp each night??
ScarletRose, we will have one site for the entire week. I wonder how the casadillas would be wrapped in corn husks instead of foil. Foil is bad when backpacking. It's heavey and has to be packed both in and out.
Summertop: Lots of choices.... If money isnt a problem those freeze dried or dehydrated meals are really good, and easy, you just add h2o and voila!
Other less expensive options.... I like to do as much prep before I leave as possible. I mean, you can have your eggs already scrambled and stored in a container or canteen or something. One pot meals are also a good idea. When you are camping and hungry, everything tastes good, so dont worry about gourmet. Keep it simple. A big pot of pasta and some sauce is good. Chili, or some other one pot meals? Hamburgs and hot dogs are fairly easy and a favorite. I will think about it somemore and get back to you...

1 Cup Vinegar
1/2 oil
1 Tsb. Salt
1 1/2 tsb. Poultry Seasoning
1/2 tsb. Pepper
Place in a pan and bring to a rolling boil...pour over chicken pieces and let marinate several hours..BBQ on grill till done .It's very good !!!

1 1/2 Teaspoons Poultry Seasoning
1/2 Teaspoons Pepper
Place all ingredients in a sauce pan ..bring them to a boil..
Pour over Chicken pieces and marinate several hours ..BBQ on grill till done ! sorry i wrote this twice but the amount of salt was 1 Tablespoon ..Poultry Seasoning & pepper are Teaspoons :)
