Dang.. you all are making me hungry.. of course.. I have 16 pies sitting on my kitchen table with 2 more in the oven.. Yes mom, all the pies are done and ready for Sat Night.. all 18 of em.. Now.. when ya going to make those spare ribs Jim was talking about.. I could use a bit of someone else's cooking.. LOL
"Snoopy": I realize your oven is off limits due to it being broken.. and yes.. you can do a chicken in a microwave.. but, perhaps you can find someone with a roaster.. or maybe you can afford one.. if not .. I recommend asking Santa to bring one next year..
When I was up in Powell taking a full load at the college.. the holidays were a mad rush for me.. since we had finals one week before.. so cleaning house, decorating and baking was crammed into one week.. I held the Christmas Dinner on Christmas Eve for my Family.. and during one year my parents brought up two roasters one for the Ham.. and one for the Turkey.. I was amazed that the Turkey browned beautifully.. ever since then.. I use the roaster for the meats.. and leave my oven and microwave.. for the side dishes..
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup milk

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C). Line bottom of pie pan with crust. In a skillet saute the chopped onion until slightly soft and set aside.
Mix together the turkey or chicken, mixed vegetables, onion, soup and milk. Pour into pie crust, cover with top crust and crimp edges.
Poke holes in top crust and bake for 40 to 50 minutes.
INGREDIENTS:
1 1/4 cups boiling water
1 cup quick-cooking oats
1/2 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 1/2 teaspoons salt
1 1/3 cups all-purpose flour
1/2 cup butter
1 cup packed brown sugar
4 tablespoons evaporated milk
1 cup flaked coconut
1 cup chopped walnuts
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
Pour boiling water over oats. Set aside.
Sift together flour, salt, soda and cinnamon. Set aside.
Cream 1/2 cup butter, sugar, 1 cup brown sugar and eggs until fluffy. Add flour mixture and mix in. Add softened oats. Pour batter into a 9x13 inch pan.
Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Remove cake from oven. Set oven temperature to broil.
In a saucepan, combine milk, 1/2 cup butter and 1 cup brown sugar.
Heat until melted, then add coconut and chopped nuts. Spread on warm cake.
Place cake under broiler for 2 to 3 minutes.

Take a small pair of freshly laundered pants and roll up the cuffs a few times. Stuff the pants with wadded-up newspaper and place them in a sitting position on a large platter. Use a large, heavy can inside the waistband of the pants to keep them upright. Now place smoked turkey legs, cheese logs or summer sausages at the ends of the pant legs. Garnish the platter with lettuce leaves for a dainty touch. Now fill a medium-size bowl with dipping sauce or crackers and place it on top of the can. Use tape to secure the waistband around the edge of the bowl. Set the whole platter in the middle of the snack table and wait for the gasps!

Original recipe yield: 1 - 9x9 inch square pan

1/4 cup light corn syrup
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt

DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 9x9 inch pan.
In a medium bowl, cream together the butter, corn syrup and sugar.
Beat in the eggs one at a time, then stir in the vanilla.
Combine the flour, cocoa and salt, gradually stir into the creamed mixture.
Spread evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until brownies pull away from the sides of the pan.
Frost when cooled, if desired.

Summertop: I wonder if they were premade and rolled.. and then you just put them in foil on the fire.. Hmmm

Hey.. tell me.. are you going to have a site where all your foods and tents will be set up.. that you come in to in the evenings.. or do you all carry that stuff and set up camp each night??
Summertop: WElp.. I just fixed myself a chicken casadilla.. I spread on sour cream, cheddar cheese, diced toms and onions, chicken, and avocado spread.. and then put in oven for 20 mins..
Avocado spread for large groups
12 avocado's gutted
1-2 cup mayo
(not miracle whip! YUK)
garlic powder
all purpose seasoning.. (I use Mrs. Dash original)
2 or 3 packets dry veggy soup mix (lipton cup a soups or similar)
mostly mixed on taste.. cream all ingredients together, more mayo can be added to fit your tastes..
Note the earlier you prepare the more the seasonings get to come out in the spread.. make sure to put in air tight container.. :)
also prepare the Chicken ahead of time as well..
Chicken.. skinned, boned, and cubed.. (I use just the white meat)
pan fry adding garlic and Mrs Dash along with a splash of lemon.. no need to use any oil..

I don't know how easy this would be to have on your backpacking trip.. since the sour cream and avocado spread along with the prepared chicken chunks would need to be kept cold..
but as for easy meal.. all you would need to do is get the fire going.. and then place huge cookie sheets over the grill.. or spread foil over the grates.. the person hand makes his tortilla.. and warms it to his liking.. and usually one tortilla fills ya up!
A crisp leafy garden salad with a raspberry vingrette... and cherry toms..
for the main dish.. thick butterfly porkchops.. without bones.. smothered in Raspberry or appricot chipolte sauce.. just douse the whole jar into the pan.. and cover with foil.. bake at 325 for about 30 mins.. to 45 mins.. depending on how thick..
then take a sweet potato.. slice in half length wise.. bake and when put on plate garnish with a drizzle of butter and a sprinkle of cinnamon..
for desert.. have some chilled strawberries with stems sliced off.. and a dipping dish of chocolate sauce... yummy!
you also can fix a shrimp cocktail to serve in between the salad and main meal..
